Coast Cooking: Crab cocktail

Crab meat is one of the wonders those of us who live on or near the Coast are blessed with.

Cheap it is not, but stunningly delicious it is. Most often we see claw, lump and jumbo lump crab, but there are several other types, depending on where on the body it came from. When possible, buy the best -- jumbo lump.

So what do you do with jumbo lump crab? Remember the shrimp recipe recitation in Forrest Gump movie? It's the same deal.

Make an omelet with it, use it in a dip, make a dressing with it and serve with roasted fish, shrimp or even top a filet of beef with it. Perhaps the very best way is to serve it in a simple crab cocktail.

CRAB COCKTAIL

1-1/2 cups crab

1/4 cup best mayonnaise

juice of 1 lime

1 chopped green onion

Optional 1/2 teaspoon wasabi

Carefully combine the ingredients, do not over mix or you will break up the lumps of crab. Serve chilled on a bed of greens. It is that simple.
