Ingredients

  • 2 cups strawberries, chopped
  • 2 cups cucumbers, chopped
  • 1 cup quinoa or farro, cooked, at room temp.
  • 1/2 cup pistachios, chopped
  • 1/2 cup fresh mint
  • 1/2 cup ricotta salata, feta or goat cheese, crumbled
  • 12 oz. arugula
  • 1/3 cup olive oil
  • 2 Tbs. white wine vinegar
  • 2 Tbs. honey
  • 1/2 small shallot
  • 1/2 tsp. Dijon mustard
  • 1/4 cup orange juice
  • 3 Tbs. fresh mint
  • 1/2 tsp. kosher salt

Instructions

Add all of the salad ingredients to a large bowl.

Add all of the vinaigrette ingredients to a blender and blend on high until the dressing is smooth.

Pour mint vinaigrette over salad and toss gently until all the ingredients are evenly coated. Serve immediately and enjoy!
