There used to be just a handful of Coast eateries that served classic fusions of Creole and Cajun food.

But times change, and there is a new breed of restaurants offering upscale bar food along with beach views, fine dining and international cuisine and dishes that have been influenced by national trends.

A few places have local cuisine, such as the Biloxi Lugger on Point Cadet and the Fillin’ Station on Main Street in Biloxi, but there is a relatively new place in Bay St. Louis called Louie & the Redhead Lady that has classic New Orleans food graced with that Creole touch and Cajun charm.

Check out the Eggplant Algiers, loaded with seafood and a great cream sauce.
