Clams, or mussels, served with pasta is one of the most delicious and comforting Italian dishes.

Who hasn’t heard of linguini and clams? Many great Italian dishes are simple to prepare, if you have fresh in-season ingredients, but nothing is simpler that clams and pasta.

Pre cook the pasta (linguini is recommended), but do not cook it all the way through. Leave it just this side of al dente. Melt butter, add some garlic, then some white wine, cook for just a minute or two. Now add the clams, still happy in their shells, put the lid on and let them steam in the mixture until the shells pop open and their juices mix with the butter and wine. Remove the clams, add the pasta and turn the heat up. Toss until the sauce has thickened a little and the pasta is hot and al dente. Add the clams, and serve with the same white wine you used to cook the clams.
