This week’s blog topic is pasta dishes and sauces that you may not be familiar with, but are Italian classics.
We are taking inspiration for this week’s blog entries from Marcella Hazan and her cookbooks. Today’s recipe calls for spinach, but feel free to use any greens you like.
It would be wonderful with kale. You can leave the ricotta out if you like, but it does add a creamy element.
SPINACH SAUCE WITH HAM

1 large package fresh spinach
1/2 stick butter
2/3 cup chopped ham
1/2 cup ricotta
1 pound pasta
Cook the pasta according to package directions, drain and set aside. Melt the butter in a large pan, add the ham and brown, then add the spinach, a hand full at a time and cook until wilted. Add the ricotta and mix well. Combine with the pasta, again mixing well, top with lots of Parmigiano-Reggiano and serve at once.
