Coast Cooking: Try fresh flat bread from the farmers market

The topic for this week’s blog entries is good things to eat that you can get at local farmers markets. Let me begin today by reminding you that many of the vendors sell at multiple markets, so even if you visit a market you have not been to before, chances are your favorite vendor will be there.

One of my favorite things to buy at the market is freshly baked, local bread.

The vendor in Ocean Springs is Serious Bread from Bay St Louis. All of their bread is good, but check out the flat bread. There is so much you can do with it, from making your own, chewy pizza, to open-faced sandwiches your family will love. Try this one when you are in the mood for something Mediterranean.

OPEN FACED FLAT BREAD SANDWICH

1 large flat bread

1 cup crumbled feta cheese

1/2 cup kalamata olives, sliced in half

1/2 cup sliced red onions

1/2 cup best quality olive oil

Sea salt

Give the flat bread a good rub with half the olive oil. Spread the cheese out evenly, followed by the olives, and onions, drizzle on the rest of the olive oil just before serving, if you do it too early the bead will be a bit soggy, then add a sprinkle of slat. Serve at once.
