Grilled pork chops are among the biggest delights at many Vietnamese restaurants.
They have spent some time in a sweet marinade, and when served simply with steamed rice and a cucumber and tomato salad, they are divine.
The grilled pork chops are another example of how the simplest recipes are often the best. Do not be afraid of the fish sauce. It is amazing when served in conjunction with the other ingredients, and is the centerpiece of all of those Thai/Vietnamese dipping sauces you love.
VIETNAMESE-STYLE GRILLED PORK CHOPS
4 bone-in pork chops
2 teaspoons chopped garlic
1 tablespoon chopped onion
2 teaspoons fish sauce
1 teaspoon sugar
Green onions for garnish
Combine the garlic, onion, fish sauce and sugar to make the marinade. Add the pork chops and leave for at least 6 hours. Drain off excess marinade and sauté in hot oil until done. Serve with steamed rice and a tomato and cucumber salad. Reserve some of the marinade for a dipping sauce, if you like.
