Coast cooking: A quick pasta dish

We almost always think of Italian food when we think of pasta.

Go to the big Asian market on Division Street in Biloxi, and look at the dozens and dozens of different types of pasta they offer.

One of my favorites for a quick pasta-like snack is the Mama variety of what we call Top Ramen. You can get a case of 30 portions for about $8, so it is great emergency food as well. Put a case or two in the pantry and you’re set for about anything. 

QUICK PASTA

1 package Mama dried pasta (discard seasoning packets, they have way too much salt)

1 cup chicken stock

Olive oil

Parmigiano-Reggiano

Add 1 cup of stock to a sauce pan, bring to a boil, add the pasta and stir to loosen. When the stock has cooked off, the pasta is done. Add a little olive oil and some Parmigiano-Reggiano, and you have a great snack with only about 300 calories.
