Coast Cooking: Try packing meals for your next road trip

When taking that long summer-time road trip, a primary concern is what to eat along the way. 

If you are like me, fast food just isn’t an option. 

Here is a good chance to get out of the box, feed your family something good, save a few bucks and be relatively healthy as well.

The only requirement is that you will have to pack a cooler along with everything else. 

The simplest solution is to visit the deli and pick up a selection of meats, cheese and condiments. Let everyone make their own sandwich.

If you want a one pot/bowl, prepared in advance solution, try this easy and delicious salad.

ROAD TRIP SALAD

3-4 red ripe tomatoes

1-2 cucumbers

1 cup your favorite olives

1 cup crumbled feta cheese

4-6 pepperoncini peppers

Olive oil

Salt

Chop the tomatoes into bite-size shapes, cut the cucumber into 1/2-inch rounds, then cut in half again, combine with the rest of the ingredients, add a generous amount of olive oil, a pinch of salt if you like, and store in a sealable container. Make sure to keep cold.
