Coast Cooking: Enjoy good things from the land and sea

Some things just go together, and every once in a while those good things share a season. Two of those ingredients are shrimp and tomatoes, both summertime favorites, and if you throw in some good smoked sausage and a little rice, then you have something very special.

Who knows what it is that makes for harmony in a recipe? It would be easy to speculate in a foodie sort of way, but what's the point? Some good things to eat just began to sing when paired with other good things. The smoke in the sausage, the sweetness of the just picked tomatoes, the wholesomeness of the steamed rice.

I am just as content to say it is magic: Good things from the good earth and salty sea.

SHRIMP, SAUSAGE AND RICE

1 cup jasmine rice, cooked in 2 cups water

1 pound peeled shrimp

1/2 cup sliced sausage

1 chopped onion

1 chopped bell pepper

Salt, pepper, red pepper flakes

Hopefully you have a good rice cooker and you can just add the rice and water and be on your merry way.

Sauté the sausage in a little oil until well browned; remove and set aside. Turn to high and cook the shrimp for just 2 minutes over a high flame. Remove and set aside.

Add the vegetables, season aggressively and cook for 5 minutes. Now combine everything, taste and re-season as needed. Serve with ice-cold beer.
