Fresh tomato can make the base of a great salad, and if you add the right ingredients, it can have a delightful Mediterranean flair. This salad really is simple, but as is always the case, the best ingredients you can find and afford should be used.
It is hard to taste test some foods side by side, but the difference in olive oils is a case in point. A good olive oil should be vibrant green; if it is clear, then it has had all the flavor processed out of it. The best is unfiltered, green and fragrant. Put your nose to it and you will see the difference.
2-3 chopped garden fresh tomatoes
1 thickly chopped cucumber
6-8 pepperoncini peppers
1/2 cup of your favorite olives
1/4 cup chopped red onion
1/2 cup crumbled feta cheese
A good blessing of your best olive oil
3-4 tablespoons rice vinegar
1 flatbread for each person
This recipe is really easy. Just gently combine the ingredients, except for the flatbread, taste and season as your palate suggests. Serve chilled over a flatbread.
