Fried rice originated in Asia, but once it reached this country, it went wild.
Basic Chinese-style fried rice is nothing more than rice, eggs, soy, cooked peas and scallions, but there seems to be no rules when it comes to this dish here in the USA or anywhere else.
This version is meant to be rich and filling. You will need to go to the Asian market, as that is the only place where you can find the roasted, crispy pork or the red Chinese-style barbecue pork
1 cup jasmine rice cooked in 2 cups of chicken stock
1 cup chopped crispy pork or red barbecue pork
1/2 cup sautéed shrimp
1/2 cup chopped green onion
2-3 cloves chopped garlic
2 farm fresh eggs
Red pepper flakes
Add the green onion and garlic to a sauté pan large enough to hold all of the ingredients. Cook with a little oil until the garlic is fragrant. Add the pork and shrimp, then the rice, mix well. Season well, add the eggs and toss until the eggs are incorporated and the egg is cooked. Add soy as needed. Serve at once.
