Coast Cooking: Try a Greek- or Mediterranean-style salad

A delicious spring or summer time option, when you want something hearty but easy to make, is to prepare a simple Greek or Mediterranean-style salad. 

There are no rules here, so you can add just about anything you like, but the first decision you face will be if you want it to be lettuce or tomato based.  

I prefer tomato. It is critical to have feta cheese, olive oil and olives, and you can pick any that suit your fancy.  But from there out, you are on your own.

I do like to serve it with a flatbread, like the Indian naan, or a pita bread, but that is just me. Serve it neat if you prefer, or perhaps with just some flavored croutons. 

It goes without saying that the quality of ingredients you choose will determine the results. 

MEDITERRANEAN STYLE SALAD

3-4 chopped tomatoes

1 cup chopped cucumber

1/2 cup thin sliced onion

4-6 Pepperoncini peppers

1/2 cup favorite olives

Best quality olive oil

Salt and pepper

Make sure to use your best knife skills to make the onions paper thin. Combine all the ingredients, using just enough olive oil to tie everything together. Taste and season with salt and pepper as required. Cover and set aside for 30 minutes or so. Serve with a good flatbread and more oil on the table for those who want it.
