Coast Cooking: Best BLT ever

One of my favorite sandwiches is a good BLT. 

Be sure to get a good quality bacon. Benton's Bacon and Hams, is one brand that many chefs, including Emeril Lagasse, David Chang and Sean Brock, all agree is good. 

But choose one that suits your taste.



Locally baked wheat bread

Homemade aioli  (garlic mayonnaise)

Thin sliced, red ripe tomatoes (smell before you buy)


Cook the bacon slowly over medium heat, don't rush it. Toast the bread, add a little butter if you like. Remove the bacon and drain on paper towels. Please make sure the tomato you use smells like a tomato. If it has no smell, it has no flavor. Ditch the iceberg lettuce, it has almost no nutritional value and no flavor at all. Build the sandwich, use copious amounts of aioli, and serve at once.  Make it a double-decker if you like.
