Broccoli rabe, rapini to the Italians, is a wonderful and healthy vegetable that is often overlooked.
You can sometimes find it in Asian markets, but generally it comes into season in early spring. It is healthy, simple to prepare and absolutely delicious.

1 bunch broccoli rabe

Large sauce pot
2-4 cloves garlic
Plunge the broccoli rabe into salted boiling water, and cook for 3 minutes, remove, shake off excess water and quickly plunge into an ice bath. This stops the cooking and preserves the bright green color. Thinly slice the garlic, add olive oil to a sauté pan, add the garlic and just 1 minute later the broccoli rabe, cook over medium high heat until it is tender. Serve at once.
