Coast Cooking:Meatballs start off our week of comfort foods

This week we are going to focus on comfort food since the weather is changing and nothing is better on a cold day than something that is satisfying, delicious and filling.

Let’s start with meatballs, a favorite Italian American dish.

If you prepare this dish well it is delightful. You can serve meatballs in a po-boy, by themselves or with pasta. Want to try something different? Serve meatballs and a red sauce over sautéed yellow squash.

MEATBALLS

1/2 pound ground beef (not too lean)

1/2 pound ground pork or Italian sausage

1-2 whole eggs

1/2 cup Parmesan cheese

3-4 cloves chopped garlic

1/2 cup panko bread crumbs

2-3 pinched red pepper flakes

Black pepper and salt

Combine the meats and season aggressively. Add one egg, Parmesan, garlic and bread crumbs. If it sticks together well enough to make into balls and they hold together, do not use the other egg. If you need it, use it. Form into balls, but make sure to make them all the same size. Add olive oil to a large sauté pan and sear well. Do not take a short cut here. Add to a simmering red sauce and cook until tender.
