Tortillas, they’re not just for beef

The flour tortilla is about as versatile, affordable and delicious a food delivery system as can be found.

When stuffed with something good to eat they magically become tacos or burritos and what you can stuff this wonderful flatbread with is an almost endless list.

Typically we fill them with seasoned ground beef, salsa, cilantro and lots of other good things, but there are no rules on what can be used.

Try scrambled eggs and hot sauce, grilled when filled with ham and cheese, or any other combination of good things that you would normally fill a sandwich with.

Here's an idea I am fond of this time of the year.

2-3 yellow squash

3-4 slices smoked sausage

1/4 cup chopped red onion

2-3 cloves chopped garlic

1-2 pinches red pepper flakes

 

Sauté the sausage until it browns, add the onions in a little oil and cook for a few minutes, add the garlic, season with the pepper flakes, then add the chopped yellow squash. Sauté gently until the squash is tender. Warm the tortilla in a hot pan, stuff with the mixture, add a little good quality olive oil if you like and a few drips of Valentina hot sauce if you like. Serve at once.
