Try this variation on tacos

Tacos have been a craze for years, another contribution of the Tex-Mex invasion.

All too often, in this part of the world, our tacos are filled with some pretty uninteresting stuff: ground beef with canned seasoning? Really?

A great taco is not far off or hard to make, but you will have to go by a Hispanic grocery and get real ingredients. The most important ingredient, at least for this taco idea, is homemade chorizo sausage.

Make a simple fresh salsa with chopped onion, tomato, cilantro and a hot pepper if you like.  Adding a little olive oil for body will help.

For some reason fresh chorizo is almost always cooked without the casing, so just sauté it in a bit of oil until done.

Don't be put off by the red color. Fill the taco with a little chorizo, remember a little goes a long way. Garnish with your fresh salsa and some just peeled avocado.  No sour cream here. Please.
