Why not have a cool, caprese salad on a hot summer day?

Let's get back to a summertime theme.

Some days it's just too hot to contemplate a big meal or working in a hot kitchen, so why not try something a little cooler, say a salad?

A green salad has got to be loaded with some pretty interesting stuff to get my attention, but there is one very simple salad that is cool, light and refreshing, and delicious.

A caprese salad is made from sliced fresh mozzarella, tomatoes and basil and is lightly seasoned with salt and olive oil.

It has obvious Italian origins. It translates to the salad of Capri, and it's colors represent the colors of the Italian flag.

Pair this salad with a good Italian Pinot Grigio and you will be happy indeed.
