Here is a fun, fast, easy and tasty dish suggested by my friend and business partner, Kim Wilson.
Cheesy chicken and rice
Steam a cup of rice in two cups of water. Sauté a chopped onion, a bell pepper and ½ cup of celery in oil, season with black pepper, salt and Tony Chachere’s. Add a chopped jalapeno if you want it spicy. Add two cups of diced chicken (a rotisserie chicken from the grocery is perfect), ½ cup cream cheese, and a cup of diced cheddar cheese. Drain a cup of Rotel, and add it to the mix. Give it all a good mix, top with bread crumbs and bake to brown if you want, or just serve it right top the stove.
