The cookbook I am writing, “In a Hot Minute,” is all about quick recipes that don’t sacrifice quality for brevity.
Many of the recipes involve rice or pasta, with the idea being that while the rice is steaming, or the pasta boiling, you can get the rest of the recipe finished.
Here is an example:
Linguini and spinach

Prepare pasta (I like linguini) according to the package directions. Do not overcook it. Al dente is just right. Buy a bag of spinach, add it to a large pot with a cup or two of boiling, salted water, and simmer just until wilted (2 minutes at most). Drain the spinach and toss with the pasta, add lots of good olive oil, and a fair amount of real-deal Parmigiano-Reggiano. Serve at once, with a nice glass of Italian Pinot Grigio.
