Monday’s blog informed you about “In a Hot Minute,” the cookbook I am writing (volume one is almost done).
During a recent conversation with my friend Ashley Lundry, Hurricane Hunter stationed at Keesler AFB, she told me she is interested in good food but does not have time to prepare the type of meals I always go on about.
“If you would write a cookbook that showed me how to make good food but didn’t take so much time, I’d buy it,” she said.

Today I’ll share another example of the sort of recipe I’m including in the “In a Hot Minute” cookbook.
Buy a package of smoked pork chops (or thick-sliced, cooked ham) and a bottle of olive salad at the grocery store.
Chop the pork chops (or ham) into bite sizes, add olive salad and mix well. Chill and serve as a salad, a sandwich (it is particularly good with melted cheese on top) or a taco. This recipe is delicious and won’t take you more than just a few minutes to prepare.
