I love pimento and cheese and have spent hours trying to come up with innovative ideas to serve it and improve on the basic recipe.
One of my favorite ways to serve pimento and cheese is on a hot dog.
Just grill the dog. You will want to get it crispy and brown (a boiled dog just would not do).
Add the dog to a bun, anoint with pimento and cheese, then run it under the broiler, or back on the grill (indirect heat) and close the lid.

To be as good as it can be, the cheese must be melted and gooey. If you want to try something different, slice the hot dogs and serve them as an appetizer. Adding sliced jalapenos will make them a spicy treat.
