This week I am blogging about pimento and cheese.
I love this stuff and have spent a fair amount of time figuring out interesting things to do with it.
One of the simplest, and most interesting things to do with it if you are a cheesy, gooey sort of person, is to use it to stuff a bell pepper.
Just add rice (I prefer brown rice), a little chopped onion if you like, then season aggressively with red pepper flakes, and pop it in the oven.
This idea would work just as well with poblano peppers, and if you want to use jalapenos, wrap them in bacon before putting in the oven.
