As promised in Monday’s blog post, today I will tell you how to make mayonnaise or aioli in 2 minutes.
I found this recipe on Alton Brown’s web page and was amazed at how easy and delicious it is.
You will need an immersion blender, and you should have one in your well-appointed kitchen anyway.
Immersion blenders have a thousand uses and are so easy to use and clean.
You also will need a cup or cylinder just larger around than the head of the blender. For my blender, that is a Solo cup size, so I call this “Solo Cup Mayo.”
Take one whole egg, 1 cup oil, a teaspoon lemon juice, a pinch of salt and pepper (use white pepper if you don’t want black dots in your mayonnaise), and a teaspoon of your favorite mustard.
Put all the ingredients in the Solo cup, put the immersion blender in, all the way to the bottom, and pulse. You may have to rock the blender side to side to get it started, but if you have done everything right, you will have mayonnaise in less than 2 minutes.
To make aioli do exactly the same thing but use one egg, one cup olive oil and a clove of crushed garlic.
