Rice and smoked sausage make a great Southern pairing.
You can jazz it up by sautéing vegetables (onion, celery and bell pepper), browning the sausage, adding the rice and stock to make jambalaya, or you can simply fry sausage, steam rice and combine the two. Both are delicious, quick and hearty.
What makes this dish hearty, if done right, is to steam the rice in stock, just plain water won’t do.
The sausage should be smoked and a bit spicy, and it has to be fried, or if you like, broiled and crispy.
Nothing brings out the flavor in pork like being crispy and brown. You can also add hot peppers and I like a pinch or two of red pepper flakes.
Sausage and rice makes for a hearty breakfast, or a quick meal when you are too tried to make something complicated.
