Rouses now carries Delta Blues Rice, grown in the Mississippi Delta, and if you’ve got a bag and want to try something with a little summertime spirit to it, try this.
Dice tomatoes and bell pepper, simmer greens in stock, then toss it all into a few cups of steamed rice.
You might want to add a little stock or butter, if your diet allows, just so the rice is moist. Toss in a hot wok or sauté pan just to incorporate and gently toast the rice. Some people like to add a little vinegar as well.
This would also be a great stuffing for the baked bell peppers we focused on in Thursday’s blog but would be just as delicious as a main course.
