One of my favorite ways to serve fried or baked catfish is in a taco.
Use whole wheat tortillas to make it even more healthy and garnish it with a fresh salsa of tomatoes, onion and chopped jalapeno.
Simply combine the vegetables (chopped to about the same size), season with salt and pepper, a splash of Valentina Hot Sauce and some olive oil and you are home free.
