This week’s blog entries are going meat free for Lent.

The recipes are all low-key and simple, keeping with the theme of Lent as a time of penance and sacrifice.

Even if your religious beliefs do not include the observance of Lent, there is nothing wrong with going meatless for a time.

And abstinence rules allow for the consumption of fish and shellfish on meatless days.

Shrimp and grits fits the bill.

Sauté a pound of large shrimp (don’t overcook) in garlic infused oil, drain and set aside. Add chopped onions and bell pepper to the pan, add more oil if needed, season with red pepper flakes and salt and cook for 10 minutes. Add a cup of chopped tomato and cook for 10 more minutes. Taste and re-season as necessary. Toss the shrimp in and turn the heat off. Make the grits. Cook the grits to package directions.

Plate the grits and top with the shrimp and sauce. Garnish with green onions.
