Italian food is perhaps my greatest culinary weakness and I’ve devoted this week’s blog posts to the topic.

There are a few good Italian restaurants from which to choose on the Mississippi Gulf Coast. There are dozens of pasta options out there, pizza places by the score, but sadly, one of my favorite recipes is seldom found around here.

Clams and linguini is delicious and surprisingly easy to make. Steam fresh clams in wine, add a few shallots and fresh herbs, and that’s it. Make sure to serve this great dish with crusty French bread for dipping.

The good news is that several local grocery stores have fresh clams for sale. Just make sure that when you steam them, you discard the ones that are already open before cooking and the ones that do not open when cooked. They have met an early demise.
