This image was recently taken at Cora’s Restaurant, the fine-dining place at the newly opened White House Hotel in Biloxi.
Getting the proper sear on fish is always problematic, because if your pan is not hot enough the fish will overcook before the color is right. In this example Chef David Gooch at Cora’s got it right.
The beautifully crusted fish is mellowed by the creamy butter sauce with which it is garnished. Bright tomatoes make another appearance, a beautiful green herb garnish is center stage, all presented on a bed of julienned vegetables. This is as well-thought-out a plate as you will find anywhere.
