This week’s blog entries are about the Ocean Springs Fresh Market.
One of my favorite vendors there is Bubba Grits, aka Robert Sweeting, who sells the Original Grit Girl Grits and Delta Blues Rice Grits.
Both products are superior to what you can buy at most retail outlets, and both are made as sustainably as possible and with the one common element all the vendors seem to have, and that is a passion for producing something of the first quality, while being as careful with Mother Earth as possible.
The grits are made from corn grown in Houston (Miss.) and ground fresh every two weeks. The Original Grit Girl sells her grits to more than 130 fine-dining restaurants all over the USA.
Delta Blues rice is a bit of a newcomer, but they do practice sustainable farming, and are heading down the difficult path of becoming certified as organic. If you have never had rice grits, give them a try. You will be surprised how delicious they are.
ORIGINAL GRIT GI CHEESE GRITS
2 cups chicken stock
1/2 cup cream
1 cup grits
2 cups cheddar cheese
Combine the stock and cream and bring to a simmer, whisk in the grits and cook for 10 to 20 minutes. Add the cheese and continue cooking until done.
