Coast Cooking: These biscuits are in a league of their own

We Southerners love good biscuits, and I recently had the pleasure of meeting two women in Ocean Springs, who are putting a spin on this Southern favorite.

Of course, there are lots of places that make good biscuits on the Coast -- too many to name, but the biscuits the women at The Greenhouse on Porter make are in a league of their own.

Are you thinking buttermilk biscuits? Flour, baking soda and yeast? Forget about it.

These women are cooking with gas, and are putting out some of the most innovative, delicious biscuits I have ever tried.

Here are a few of the biscuits and toppings I have seen there recently: apple king cake biscuit, sweet potato biscuit, arugula and mozzarella with balsamic roasted mushrooms, pear biscuit with cardamom fluff, and cheddar biscuits Caramelized onions or roasted tomatoes and goat fluff.

My favorite topping is a simple roasted tomato jam.  It's not really a jam, but roasting the tomatoes, with just a bit of olive oil, and a sprinkle of balsamic if you like, makes them so sweet you will think it is jam. Try a sweet potato biscuit with the delicious tomato topping, and, your morning will start off with a very special start.
