We went to Tom’s Extreme Pizzeria and designed our own pizzas. Here’s what we came up with

In case you haven’t heard, the Sun Herald is stepping into the pizza-design business.

Why? Because pizza is great. When you go down the list of humanity’s greatest innovations, you’ll find the wheel, fireworks, March Madness and pizza.

As journalists, it’s in our nature to be curious. Just how far can you go with the pizza? That’s why we’ve solicited you, reader, for your greatest creations.

There’s power in numbers and somewhere in South Mississippi someone has the perfect concoction of toppings for a pizza so grand it deserves the blinding spotlight only a video posted on sunherald.com can provide.

Maybe it’s you, maybe it’s the guy who fell off that Mardi Gras parade float in Biloxi or… maybe it’s me.

So I did the American thing to do and stepped up to the plate. There’s only one restaurant that truly allows you to let your most creative juices flow: Tom’s Extreme Pizzeria.

With 14 sauces and nearly 50 toppings, there are quite literally millions of combinations to choose from at the popular Ocean Springs pizza joint. Being the bold initiator I am, I took two off the board.

The Cajun Italian

I intensively studied the menu and healthily hydrated with a Dr. Pepper. An idea began to form.

It started with an Alfredo sauce base. It needed kick: jalapeños. That pairs well with pepperoni.

Add red onion and, for a local taste, andouille sausage.

I cooked with this one, folks. The ingredients mingled perfectly. There was kick from the jalapeño and pepperoni complimented by the smoothness of the sauce.

Not sure you’re beating this one.

The Gulf Coast Slice

Very original name, I know. But that doesn’t matter. It’s the substance that counts.

In this case, it’s garlic butter, black olives, grilled onions, basil and grilled shrimp.

Similar to the first, this combines the flavors of pizza’s homeland with the familiar vibes of the Coast.

And it was great. There are similar versions of this seafood pie in the area, but mine is the best. It brings the light sweet-and-salty combo of onion and olive in between garlic and the rich tenderness of shrimp.
