Construction begins on $1.6M Slim Chickens restaurant, the 1st on the Coast. What to know

Construction is under way for the new Slim Chickens restaurant in Biloxi.

A $1.6 million building permit was issued for the fast casual restaurant at 916 Cedar Lake Road. It’s right off I-10 at the Popp’s Ferry Corner, where a tent pops up seasonally to sell fireworks and Christmas trees.

The target opening date is July, weather permitting. Advanced Building Specialties in Petal is the contractor.

The chain has more than 100 restaurants nationwide and this is the first one on the Coast.

Southern Partners, based in Greenwood, is bringing the franchise to Biloxi. It will have seating indoors and outdoor patio seating, a drive-thru and curbside pick-up, said David Bagwell, one of the partners in Southern Partners.

Slim Chickens is known for its chicken tenders, sandwiches, wraps, wings and salads. The chicken is given a Southern-style buttermilk marinade, then lightly breaded by hand, cooked to order and served with a choice of 17 house dipping sauces.

“For us it’s more of a culture than just the food,” Bagwell said. Blues music plays in the background, he said, and the staff is casually dressed in jeans and shirts.

An opening date hasn’t yet been announced.
