New bakery in downtown Biloxi has sweet treats and ‘one of the best bagels I ever had’

Howard Avenue in Biloxi is absolutely popping.

For years, Biloxi’s main street had little to offer, but that has changed. New businesses are opening left and right and tourists are walking the streets.

The newest shop to open is Last Minute Sweets, created by Nikole Hatfield and Tiffany Reid. It is a small bakery, with a correspondingly small menu, but, man oh man, let me tell you, something big surprises come in small packages.

Nikole and Tiffany have been friends for many years and they always dreamed of opening a bakery. They describe it as “Two small town girls with a dream,” and if you are a lover of all the good things a really good bakery has to offer, your dream is about to come true.

The menu is on the wall behind the counter, chalk board style. It lists bagels, brownies, cakes, cookies, cupcakes, muffins and the coffees and teas you might expect.

There are two brownies, chocolate fudge and another of the same but with peanut butter chips, a cake of the week and a mini pound cake, but special-order cakes are available with a day’s notice. The other categories also offer just a few choices, but I think that what you will find, is that these bakers have picked the best of the best, so you will lack for nothing

But the bagels, oh my, the bagels. There are five to choose from: plain, parmesan, everything, cinnamon sugar, and the cheddar jalapeno. I have eaten a lot of bagels in my life, but the cheddar jalapeno I had during my visit, loaded with cream cheese of course, was one of the best I ever had.

It was perfect in every way, chewy like a bagel is supposed to be, the jalapenos added just the right amount of kick, and the cheddar, well you know nothing is as comforting as melted cheddar cheese. Add lots of cream cheese, a cup of very good coffee and you have a stunningly good snack or lunch.

The cake of the week was Oreo, and it was as creative a design as I have ever seen and absolutely delicious. Who could resist an Oreo-studded cake, with lots of icing, so creamy and tempting? My temptation was to sneak one of the whole Oreos off the cake and use it to dip into the sweet goodness of all that icing and cake.

“Bringing Biloxi back one bagel at a time,” is the motto Nikole and Tiffany have come up with, and if ever there was a time when a little sweet comfort was in order, this is it.

That chewy bagel, loaded with cream cheese is calling my name, and just as soon as I can get this finished, I am heading that way, finger crossed that there are half a dozen cheddar jalapenos left. Last Minute Sweets is going to be a regular stop for me.
