It is not often people make coleslaw the main entre. It is such a great accompaniment to other foods.
Who hasn't tried the famous Memphis habit of topping a pulled pork sandwich with coleslaw?
What about adding it to the top of a cheeseburger? There are many ways to enjoy coleslaw, but if you make a good one there is nothing wrong with just digging in with a spoon.
This is a recipe I got from Biloxi fireman Max Igich, and he likes to use it to top his famous fish tacos. Give it a try and it is sure to become your favorite.

2, 10 oz packages of angel hair cut red or regular cabbage
1/4 cup white vinegar
1/4 cup sugar
1 cup mayonnaise
1/2 teaspoon celery seed
Combine all the ingredients, and mix well. Refrigerate for at least 30 minutes before serving. Remember to re-mix before serving as the liquids like to separate. Serve chilled.
