Maybe it's just me, but turkey and dressing is one of the best comfort foods ever. There are no big flavors here, just warmth, goodness and a sense of well being.
Go figure, right? Obviously there are three components to think about.
Roasted turkey, dressing and gravy. If I had to choose just one of those, it would be the dressing. All are important, and all add something very special, but the dressing strikes home to me. Try this simple recipe and let me know what you think.

4 slices smoked bacon
1 cup chopped Conechu smoked sausage
1-2 cups chopped turkey
2 cups chopped celery
1 large sweet chopped onion
4-5 cups crumbled cornbread
2 cups Panko bread crumbs
2 cups chicken stock
1/2 stick butter
Small bunch chopped cilantro
Preheat the oven to 350 f. Cook the bacon until crispy, remove and add the sausage to the same pan. Cook until well-browned. Remove and set aside. Add the onion, and celery and cook for 5 minutes. Now combine all the ingredients, mix well, place in an oven-proof pan and bake for 35 minutes.
