ROAD TRIP SALAD
3-4 red ripe tomatoes
1 cup your favorite olives
1 cup crumbled feta cheese
4-6 pepperoncini peppers
Chop the tomatoes into bite-size shapes, cut the cucumber into 1/2-inch rounds, then cut in half again, combine with the rest of the ingredients, add a generous amount of olive oil, a pinch of salt if you like, and store in a sealable container. Make sure to keep cold.
