I found this recipe for mayonnaise in “The Silver Spoon,” the best selling cookbook in Italy for the past 50 years.
If you do not have it, you should get a copy. Remember, it is Italian, not Italian American, so some dishes you might expect to find will not be there.
The below recipe from the book is titled Andalusian mayonnaise. Don’t ask me why there is a recipe in an Italian cookbook for a mayonnaise named after a place in Spain.
The Italians use this mayonnaise for raw vegetables. I think it would be great on a burger, but that is just me.

4 tablespoons tomato paste
1 cup homemade mayonnaise
1 green bell pepper
2-3 pinches dried red pepper flakes
Combine the tomato paste and the mayonnaise. Finely chop the bell pepper and add it as well. A food processor will make this job a lot easier. Add the pepper flakes, taste and re-season as necessary. Use a whole dried chili if you like.
