Sausage and rice is one of my favorite things to eat.
It Is not diet food, that is a certainty, but it is hearty and full of flavors. It is a food pairing that just holds hands naturally, but there is a lot that can be done to the dish to make it even more delicious.
Perhaps the best addition is shrimp, but any time you combine meat and seafood, the same old dragon raises its head; don't overcook the seafood.
Here is a simple recipe, and if you follow it step by step, it is fool proof, add a little more red pepper flakes and it is spicy and wonderful.

SAUSAGE AND RICE
1 cup rice cooked in 2 cups of water
2/3 cup chopped smoked sausage
1/2 cup raw shrimp
1/2 cup chopped onion
1/4 cup bell pepper
2-3 cloves chopped garlic
Red pepper flakes
Use a rice cooker if you can, it always produces perfect rice. Sauté the sausage in a little oil until it is well-browned, remove and set aside. In the same pan, quickly sauté the shrimp until done, not more than 2 minutes at medium high heat, remove and set aside. Add the onion and bell pepper and cook for 3-5 minutes, add the garlic and cook for 1 minute more. Season to taste. Add the sausage, shrimp and rice and combine. Cook just long enough to serve hot.
