I have come late in life to hummus. I read somewhere that it is good for high blood pressure, so I gave it a try and loved it.
I decided to try to make my own and was surprised at how easy and delicious sit was. Now I am looking at making it with other beans, like black beans or black eyed peas. Why not?
Hummus comes to us from the Middle East, the region knows as Levant to be exact, but its popularity has spread all over the world.
It is almost always served in our part of the world as a dip but is also a good accompaniment to other foods. Use your imagination.

This is another super easy recipe.
1 can chickpeas
1/4 cup lemon juice
1/4 cup tahini
3-4 cloves garlic
3-6 tablespoons god quality olive oil
A pinch or two of cumin is optional
Drain the chickpeas, add the lemon juice and garlic to a food processor and blend, add the remaining ingredients and pulse the processor until you have a smooth paste. Serve on warm flat bread, tortillas puffed up in a little hot oil, or with your favorite cracker.
