I stayed at a B&B in north Mississippi recently and my breakfast was stunning.
There was the regular fare you'd expect, but when the hash brown and sausage casserole was served my day was made.
Certainly this is another old South recipe, but I haven't had anything like it in years. This is a hearty and deeply satisfying way to start the day.

HASH BROWN AND SAUSAGE CASSEROLE
1/2 cup sausage (out of the casings)
2 cups shredded potato
1/4 cup chopped onion
1/2 cup milk
1 cup best quality melting cheese (cheddar is a good choice)
Salt and pepper
Sauté the sausage until well browned, remove and set aside. Sauté the onion in the same pan (add a little garlic if you like), add the potatoes, season to your taste, and cook until browned and tender. In a casserole pan layer the hash browns, then the sausage, top with the egg and milk (well mixed) and then top with the cheese. Bake in a hot oven, 350 f. until bubble and the egg mixture is set, about 45 minutes.
