This week I’m blogging about pimento and cheese. Yes, yes, I know, it is a much-abused recipe, often loaded with processed cheese and cheap mayonnaise, but it doesn’t have to be.
Try using homemade mayonnaise or, if you want a really creamy pimento and cheese, add cream cheese. Now you are talking!
The Greenhouse on Porter in Ocean Springs is rumored to use cream cheese in their pimento and cheese, but the recipe is a secret (for good reason, as it is delicious).
I’ve given it a try and think it is great, but I still like to add a little mayonnaise.
