This week I’m blogging about beautiful blue crabs that can be found in our salty water.
Most of the week we have concentrated on lump or jumbo-lump crab, but there are delicious applications for the regular, and not-near-as-expensive crab meat as well.

Well it isn’t a difficult leap to realize that crab meat can be made delicious in a similar format.

Deep-fried crab balls are basically deep-fried rounds of crab cake.
Dip them in a tartar sauce, cocktail sauce or even a good remoulade sauce, and you will be in snack heaven.
Combine some finely diced onion, slivers of jalapeño, lots of picked-over regular crab meat and a little mayonnaise. Mix well, toss in panko bread crumbs and deep fry until golden brown. As always avoid overcooking and serve piping hot.
