Our blueberry bushes are bursting with beautiful berries. I spent the better part of Saturday morning picking blueberries and already have put up several quarts to enjoy later in the year, long after the harvest is over.
From the first picking of the season, I decided to make a cobbler.
I browsed recipes at Cooks.com until I found one that looked pretty good and give it a whirl. One of the reasons I chose this one is it has more of a streusel-type topping, rather than a heavier, doughy topping.
My husband gives it two thumbs' up, so I'm sharing it with y'all. If you have any fresh fruit, this will work. I've also made it with blackberries from my sister's bushes and it also is a tasty treat.
Easy blueberry cobbler
Fruit filling 2c fresh blueberries 1/2 c sugar 1/4 c water
Combine these ingredients in saucepan; bring to a boil, then simmer for 2 minutes. Remove from heat.
Topping 1c flour 1/3 c softened butter or margarine 1/3 c brown sugar Dash nutmeg
Combine in a bowl until mixture is crumbly. Spread fruit in 9" pan. Sprinkle topping over berry mixture. Bake in 350-degree oven for 25 minutes.
Let cool and serve warm with ice cream. Yum!
